April 25th - Taiun Tasting with Perfect Pairing Trading

We welcome back to the True Sake tasting counter Jackie Yen from Perfect Pairing Trading. Jackie will be showcasing Taiun Sake made by the first ever Taiwanese born Toji making sake in Shimane Prefecture. Chen-san has made sake at many breweries all over Japan, including the world famous Dassai Inc. Some fun sake styles will be on display here, such as the Yamahai Junmai Ginjo that pairs well with any cuisine, as well as a Junmai Daiginjo Kijoshu (two styles that are rarely seen in the same sentence), and a Junmai polished to 90 percent (which is barely polished at all). The latter two sake use a rice variety called Taichung 65 which originates from Taiwan. Very cool and exciting stuff is happening with Taiun Sake, so come check it out and see for yourself!

May 2nd - Kome Collective Nama Tasting with Bella Pearson

We welcome back to the True Sake tasting counter, Bella Pearson, from Kome Collective. This time around, Bella will be showcasing the Kome Collective Spring Nama line, which have been tried-and-true familiar brands you see every spring season here at True Sake. In the lineup is Taka Noble Arrow Nama, a bright and refreshing brew from Yamaguchi Prefecture, as well as either Ama no To Heaven's Door Nama, a super funky, bold, and punchy brew from Akita Prefecture or Rihaku Dreamy Clouds Nama, a surprisingly spritzy and dry nigori from Shimane Prefecture. We haven't completely finalized the lineup and these words I'm typing have a hard deadline. Card subject to change. But rest assured, Bella will be bringing the heat regardless of what the final lineup will be.

May 9th - Chikurin Tasting with Nishino-san from Marumoto Brewery

We welcome to the True Sake tasting counter for the first time ever Nishino-san from Marumoto Brewery in Okayama Prefecture! The Chikurin brand is one of my favorite sake brands on the market today. Marumoto Brewery uses domaine rice, meaning rice grown at the brewery, which is surprisingly not common in Japan for a myriad of reasons I won't get into in this little blurb. Marumoto Brewery also loves to experiment with blending, which can be showcased in their "Deep Field" Junmai. They also happen to make the Joto Graffiti One Cup, which is easily one of the best values in sake. We haven't finalized the details of what exactly is being poured, but rest assured this is going to be a good one. May 16th - Niigata Sake Tasting with Trac Le from Skurnik

We welcome back to the tasting counter a True Friend of True Sake, and a real sake student of the game, Trac Le. Skurnik has recently gotten the rights to distribute a few brands from the Niigata Sake Selections portfolio here in California. Niigata Sake Selections have been one of Skurnik's biggest partners on the East Coast since 2017. These are clean, expressive, and highly versatile sake that hail from the wintery region of Niigata Prefecture, famous for both the highest annual snowfall in Japan and the most number of sake breweries of any prefecture. The sake possesses a strong regional identity showing the famous tanrei karakuchi ("light and dry") style that has made it a favorite region for sake drinkers around the world. This really rounds out Skurnik's current portfolio and really is the "cherry on top" on their already stacked heavyweight lineup of sake offerings.
