From De Maison:
Yoshimura Hideo Shoten, founded in 1915 in Iwade, Wakayama, is a traditional brewery that sources underground water from the Kinokawa river and, upon entering, feels like walking back in time. Yet, Toji Akiko Fujita—among the tiny percentage of women Master Brewers—imbues a strong sense of perseverance and a style all her own. Having studied under the legendary Toji Noguchi Naohiko despite waves of resistance, she charts her own course, focusing on umami-rich, bottle-aged releases: broad, aromatically fine and with a full palate.
