Yes folks, we get very lucky in June, because we are celebrating a sake that True Sake Alumnus Matt Reifenberg refers to as, “Dan Good.” Yup, for one entire week we are highlighting this very important sake for you to try, or stock up on that is one of the best food pairing brews in the business. Need proof? Look no further than San Francisco’s very own Kuma Sushi where Chef Ryo has Dan on their awesome sake list, and pours a ton of it! Wait, I thought Dan Nama Yamahai was “exclusive” to True Sake as one of their True Sake Selection brews? You are right, but the mission of TSS sakes is for True Sake to have an exclusive brew for you, but we also let these TSS brews go out to restaurants that are smart enough to use their magical powers.
Are your interests piqued now? They should be, because this wild and wonderful Yamahai Junmai Ginjo Muroka Nama Genshu is a glorious beast in the bottle with tons of flavors and attitudes. Imported for us by the dynamic forces at Sakeman (they share the back label logos with TSS), this sake is what it’s all about. Using excellent “Bizen Omachi” special brewing rice, and the traditional “Yamahai” sake brewing technique without charcoal filtration “Muroka”, and undiluted “Genshu,” this brew is magically wild and powerful, but drinks smooth and rich for a full-bodied ricey and umami experience.
