November 7th - Room Temp Tasting with Mutual Trading and Alex Bemis
Alex Bemis from Mutual Trading is coming to True Sake for a Room Temp Tasting, and we're pulling the bottles out of the fridge to let them show us what they've got. Calling all sake lovers who like things a little more relaxed!
Here's the thing: some sake just gets better when it's not ice cold. As a sake shop, we have lots of opinions about this, and we're happy to share them. Room temperature lets the richness, the savory depth, and the layers of flavor really open up. It's a whole different side of sake, and one we think more people should experience.
Alex will be pouring three bottles that were made for exactly this. Tsukinokatsura Iwai 88 is brewed with Kyoto-grown rice, a taste of Kyoto to bring home. Tatsuriki Kimoto hails from the legendary Hyogo Prefecture and is made with AAA Yamada Nishiki rice, a real powerhouse that's underrated in a sea of modern styles. And Tengumai Yamahai comes from the historic Shata Shuzo in Ishikawa Prefecture, a brewery known for fun, robust styles. Pair it with red sauce Italian, like a margherita pizza or spaghetti and meatballs, and thank us later.
Come taste why room temp sake is amazing. Not everything has to be chilled or hot! Sometimes the sweet spot is right in the middle, where the flavors are relaxed, the textures are plush, and the sake is simply being itself. Bring a friend, bring your curiosity, and discover a whole new way to enjoy sake. We can't wait to pour with you!

Tamiko Ishidate from Regal Wine is coming to True Sake, and she’s bringing the luck! Whether you’re superstitious or not, it’s Friday the 13th, and we think the only thing to be scared of is missing out on a good pour.
Saturdays are usually our tasting day, so this one is a special Friday pouring. It’s the perfect way to kick off your weekend a little early. Skip the black cats and broken mirrors and come stop by instead. We promise the only thing spooky is how quickly the bottles disappear.

November 28th - Tasting with Avanelle Wine and Jack Hyland
It’s a first all around: Jack Hyland is making his True Sake debut, and we’re hosting Avanelle Wine for the very first time. He’s pouring from De Maison’s inaugural sake lineup, and every bottle is arriving in the USA for the first time through official import channels.
Four breweries, four corners of Japan, and this is the first time any of them are being imported and sold legally in America. The lineup draws from Michizakura Brewery in Hokkaido, Tenryohai on Sado Island in Niigata, Ilaka Sake Atelier in Nagano, and Yoshimura Hideo Shoten in Wakayama. It’s a rare chance to get in on the ground floor.
Jack will be pouring one bottle from each: Michizakura Junmai “R Class,” Utashiro Hiyori “Beautiful Day” from Tenryohai, Ilaka Silver-Black, and Kuramazaka Junmai Superieur from Yoshimura Hideo Shoten. We can’t tell you what the “R” in “R Class” stands for, so come help us crack the case. Let the “Beautiful Day” brighten your Saturday, find out if the Silver-Black is the silver lining to your weekend, and decide for yourself whether the “Superieur” earns its title.
Stop in the weekend after Thanksgiving, bring your people, and be among the first to taste what’s next. Cheers to new beginnings!
